These mussels are farmed on rafts or floating platforms from which hang the ropes, submerged in the water, to which the mussels are attached. They are selected from the rafts at the estuary entrances, where the best nutrients are located.

Escabeche is the name for a number of dishes in Spanish, Portuguese, and Latin American cuisines, consisting of marinated fish or meat, cooked in an acidic sauce (usually with vinegar), with pimentón (Spanish paprika), citrus, and other spices.

Mussels have the most impressive nutritional profile of all shellfish.
They contain high levels of highly desirable long chain fatty acids. These fats have many beneficial effects, including improving brain function and reducing inflammatory conditions, such as arthritis.
